Season a Cast Iron Pan
A new pan needs three short sessions. An old, sticky pan needs one careful afternoon.

Steps
- 01Wash the pan with hot water and a soft sponge. Dry completely on the stove on low heat.
- 02Apply a thin layer of neutral oil (canola, grapeseed, flaxseed) all over — handle, sides, inside, outside.
- 03Wipe almost all of it off with a clean cloth. The pan should look almost dry.
- 04Place upside down in a 220°C oven, with foil on the rack below to catch drips.
- 05Bake 1 hour. Turn off oven, let cool inside.
- 06Repeat 2 more times for a fully seasoned pan.
- 07After cooking: rinse with hot water, no soap. Dry on the stove. Wipe with a thin layer of oil.
