Five to seven in the evening. The light is gold, then pink, then gone. People stand more than they sit. The food is small so the conversation is large.

- 01Hour before — slice melon, wrap with prosciutto, refrigerate covered.
- 02Thirty before — take cheese out. Cheese at room temperature is the whole point.
- 03Ten before — pour the first negroni for yourself. The host should be one drink ahead of nervousness.
- 04Hostess gift: a small bottle of olive oil tied with a ribbon, or one perfect peach.
