Nine p.m. The plates clatter softly. Everyone is barefoot. Eat the food, then keep talking until the candles go out.
Steps
- 01Afternoon — make the soup, the galette dough, salt the tomatoes lightly.
- 02Hour before — fish on the grill takes seven minutes; do this when guests are halfway through their first glass.
- 03Galette goes in the oven the moment dinner sits down. It will be ready when they want it.
- 04Hostess gift: a bunch of basil from your own pot, or a small bottle of cold white wine.
