A Fall Harvest Dinner

October. The first cold week. The kitchen heats the whole house. The table is heavier than in summer; the food is, too.

Steps

  1. 01Day before — start the lamb. It wants seven hours; you want one hour of work spread across the day.
  2. 02Morning of — roast and blend the soup. Make the cake.
  3. 03Hour before — root vegetables in the oven, lamb resting on the counter.
  4. 04Hostess gift: a beeswax candle, or a small jar of fig jam.

Notes

  • Menu: roasted squash soup with brown butter, a lamb shoulder slow-cooked with rosemary, root vegetables, a pear and almond cake.
  • Drinks: a soft red wine, a cider for those who don't drink wine.
  • Table: a runner in deep rust or burnt orange linen, persimmons and small pumpkins down the middle, beeswax candles.
