Mashed Potato with Warm Milk

Three ingredients, two textures, one trick — the milk goes in warm.

Ingredients

  • 1.2kg floury potatoes (Yukon Gold, Maris Piper)
  • 150g butter
  • 200ml whole milk
  • Salt

Steps

  1. 01Peel potatoes, cut into even chunks. Cover with cold salted water.
  2. 02Bring to a boil, simmer until a knife goes through with no resistance — 18 to 20 minutes.
  3. 03Drain, return to the dry hot pot, lid off, 1 minute to steam off water.
  4. 04Warm the milk in a small pan with butter until butter melts.
  5. 05Mash potatoes, then beat in the warm milk-butter slowly with a wooden spoon. Salt.
  6. 06Eat at once. Mash hates waiting.
