Mashed Potato with Warm Milk
Three ingredients, two textures, one trick — the milk goes in warm.

Ingredients
- 1.2kg floury potatoes (Yukon Gold, Maris Piper)
- 150g butter
- 200ml whole milk
- Salt
Steps
- 01Peel potatoes, cut into even chunks. Cover with cold salted water.
- 02Bring to a boil, simmer until a knife goes through with no resistance — 18 to 20 minutes.
- 03Drain, return to the dry hot pot, lid off, 1 minute to steam off water.
- 04Warm the milk in a small pan with butter until butter melts.
- 05Mash potatoes, then beat in the warm milk-butter slowly with a wooden spoon. Salt.
- 06Eat at once. Mash hates waiting.
