Chocolate Pot de Crème

Six small jars of dark, dense chocolate. Chill them by morning, finish them by night.

Ingredients

  • 200g good dark chocolate (70%), chopped
  • 300ml cream
  • 100ml whole milk
  • 3 egg yolks
  • 2 tablespoons sugar
  • Pinch of flaky salt

Steps

  1. 01Heat cream and milk to just below a simmer.
  2. 02Whisk yolks with sugar in a bowl.
  3. 03Pour hot cream over yolks slowly, whisking. Pour back into the pan.
  4. 04Cook on low, stirring constantly, until it coats the back of a spoon — about 4 minutes.
  5. 05Off heat, add chopped chocolate and salt. Stir until smooth.
  6. 06Pour into 6 small jars or cups. Chill at least 4 hours.
  7. 07A pinch of flaky salt on top before serving.
