Chocolate Pot de Crème
Six small jars of dark, dense chocolate. Chill them by morning, finish them by night.
Ingredients
- 200g good dark chocolate (70%), chopped
- 300ml cream
- 100ml whole milk
- 3 egg yolks
- 2 tablespoons sugar
- Pinch of flaky salt
Steps
- 01Heat cream and milk to just below a simmer.
- 02Whisk yolks with sugar in a bowl.
- 03Pour hot cream over yolks slowly, whisking. Pour back into the pan.
- 04Cook on low, stirring constantly, until it coats the back of a spoon — about 4 minutes.
- 05Off heat, add chopped chocolate and salt. Stir until smooth.
- 06Pour into 6 small jars or cups. Chill at least 4 hours.
- 07A pinch of flaky salt on top before serving.
