Tomato Salad with Torn Basil
Buy the best tomatoes you can find. The recipe ends there. Everything else is salt and patience.
Ingredients
- 6 ripe tomatoes, mixed sizes and colors
- 1 small bunch basil
- Best olive oil
- Flaky salt
- Black pepper, optional
Steps
- 01Slice large tomatoes thick, halve cherry tomatoes, leave very small ones whole.
- 02Layer on a wide plate. Salt now — generously.
- 03Wait 20 minutes. The salt pulls out water and concentrates the sweetness.
- 04Drizzle olive oil. Tear basil over with your hands, never cut. Pepper if you like.
