Peach Galette with Almond

When the peaches are perfect, do almost nothing. When they are not, this is what you do.

Ingredients

  • 1 sheet all-butter puff pastry
  • 4 ripe peaches, sliced thick
  • 3 tablespoons sugar
  • 2 tablespoons ground almonds
  • 1 egg, beaten
  • 1 tablespoon honey for finishing

Steps

  1. 01Sprinkle ground almonds over pastry, leaving a 5cm border. The almond catches the juice.
  2. 02Fan peach slices on top, sprinkle with sugar.
  3. 03Fold border up, brush with egg.
  4. 04Bake at 200°C for 30 minutes until golden.
  5. 05Brush warm galette with honey for shine.
