Cold Cucumber Soup with Yogurt

Twenty minutes from cutting board to chilled in the fridge.

Ingredients

  • 3 large cucumbers, peeled and roughly chopped
  • 300g full-fat plain yogurt
  • 1 small clove garlic
  • Small handful of dill
  • Juice of half a lemon
  • Salt, white pepper
  • Olive oil to finish

Steps

  1. 01Blend everything except the olive oil until completely smooth.
  2. 02Taste. More salt? More lemon? Both, probably.
  3. 03Chill at least 2 hours. The cold is half the recipe.
  4. 04Pour into shallow bowls. A swirl of olive oil, one sprig of dill on top.
