A Cold Pea and Mint Soup

Three ingredients pretending to be five. The mint does the heavy lifting.

Ingredients

  • 500g frozen peas
  • 1 small onion, roughly chopped
  • 1 small bunch fresh mint, leaves only
  • 1 liter good chicken or vegetable stock
  • Crème fraîche to finish
  • Salt, white pepper

Steps

  1. 01Sweat the onion in a knob of butter until translucent, never brown.
  2. 02Add stock, bring to a low simmer. Add peas. Cook just 4 minutes.
  3. 03Off heat, throw in mint leaves. Blend until completely smooth.
  4. 04Pass through a sieve if you want it silky. Skip if you don't.
  5. 05Chill at least 4 hours. Serve in shallow bowls with a spoon of crème fraîche and one mint leaf, dropped, not placed.
