A Cold Pea and Mint Soup
Three ingredients pretending to be five. The mint does the heavy lifting.
Ingredients
- 500g frozen peas
- 1 small onion, roughly chopped
- 1 small bunch fresh mint, leaves only
- 1 liter good chicken or vegetable stock
- Crème fraîche to finish
- Salt, white pepper
Steps
- 01Sweat the onion in a knob of butter until translucent, never brown.
- 02Add stock, bring to a low simmer. Add peas. Cook just 4 minutes.
- 03Off heat, throw in mint leaves. Blend until completely smooth.
- 04Pass through a sieve if you want it silky. Skip if you don't.
- 05Chill at least 4 hours. Serve in shallow bowls with a spoon of crème fraîche and one mint leaf, dropped, not placed.
