The Roast Chicken That Looks Like You Cook
Parents arrive Sunday at one. Start the chicken Saturday night with salt — by lunch the next day, it tastes like Sunday at someone else's house.

- 1 whole chicken, around 1.6kg
- 2 tablespoons sea salt
- 1 lemon
- 1 head garlic, top sliced off
- Olive oil
Steps
- 01Saturday night: rub salt all over the chicken, inside and out. Put on a plate, uncovered, in the fridge.
- 02Sunday, 90 minutes before lunch: take chicken out, let it warm up 30 minutes.
- 03Cut lemon in half, stuff into cavity with garlic head. Drizzle olive oil.
- 04Roast at 220°C for 20 minutes, then 180°C for 50 minutes. The thighs should run clear when poked.
- 05Rest 15 minutes on the carving board. Serve with bread for the pan juices.
