One-Pan Lemon Pasta for One Burner

The whole dinner happens in one pan. Pasta water becomes the sauce. The smallest stove can do this.

Ingredients

  • 200g spaghetti
  • 2 tablespoons butter
  • 1 lemon, zested + juiced
  • Handful of grated parmesan
  • Salt, black pepper

Steps

  1. 01Boil pasta in just enough salted water to cover (less water = starchier sauce).
  2. 02Reserve 100ml of cooking water before draining.
  3. 03Return pasta to the pan off heat. Add butter, zest, juice, parmesan.
  4. 04Splash in cooking water a tablespoon at a time, tossing, until the sauce coats every strand.
  5. 05Salt and lots of pepper. Eat from the pan if you want.
