Pear and Almond Cake

The cake gets better the day after. Bake on Saturday for Sunday.

Ingredients

  • 200g butter, soft
  • 200g sugar
  • 4 eggs
  • 200g ground almonds
  • 100g flour
  • 1 teaspoon baking powder
  • 3 ripe pears, peeled, cored, sliced

Steps

  1. 01Cream butter and sugar until pale.
  2. 02Add eggs one at a time, then almonds, flour, baking powder.
  3. 03Pour into a buttered 22cm tin.
  4. 04Arrange pear slices on top in concentric circles.
  5. 05Bake at 170°C for 50 minutes until a skewer comes out clean.
  6. 06Cool in tin. Dust with icing sugar before serving.
