Ingredients

  • 300g brown or green lentils, rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, sliced (or 1 spoon of jarred — fine)
  • 1 can crushed tomatoes
  • 1 liter water or stock
  • 2 tablespoons olive oil
  • Salt, pepper, bay leaf if you have one

Steps

  1. 01Sweat onion, carrot, garlic in oil in a heavy pot, 7 minutes.
  2. 02Add lentils, tomatoes, water, bay leaf. Bring to a simmer.
  3. 03Cover loosely. Cook 35 minutes until lentils are soft.
  4. 04Salt at the end. Eat with bread, with rice, with a fried egg on top — it accepts all.
  5. 05Cools, refrigerates, reheats. Better tomorrow than tonight.
