The One-Pot Lentil Stew for the Long Week
When you can manage one stove, one pot, one chopping board. The whole pot lasts three nights and tastes better each one.
Ingredients
- 300g brown or green lentils, rinsed
- 1 onion, diced
- 2 carrots, diced
- 3 cloves garlic, sliced (or 1 spoon of jarred — fine)
- 1 can crushed tomatoes
- 1 liter water or stock
- 2 tablespoons olive oil
- Salt, pepper, bay leaf if you have one
Steps
- 01Sweat onion, carrot, garlic in oil in a heavy pot, 7 minutes.
- 02Add lentils, tomatoes, water, bay leaf. Bring to a simmer.
- 03Cover loosely. Cook 35 minutes until lentils are soft.
- 04Salt at the end. Eat with bread, with rice, with a fried egg on top — it accepts all.
- 05Cools, refrigerates, reheats. Better tomorrow than tonight.
